It’s another reveal day, and I am PUMPED to share this recipe. I was assigned Thyme for Cooking, and I didn’t have to do much research before the perfect recipe appeared.
You see, I have been lusting after zoodles (zucchini noodles) and a spiralizer for a while now, but the hubby is a meat and potatoes guy. But my best friend was in town last weekend, and she is a vegetarian. It’s always so much fun when she visits, and I get to experiment with a new vegetarian recipe. So, a spiralizer was ordered, and I’m in LOVE. I think I may use it for every meal.
I made zucchini noodles (zoodles makes it sounds more fun), and curly fries are on the agenda tonight!
The recipe I made/slightly adapted is for zoodles and cherry tomatoes. So many fresh flavors with very little spices. Hubby even asked if I would make it again- of course!
- 3 zucchini, about 8 inches long
- 1 large red onion, thinly sliced
- 2 cloves garlic, minced
- 3 cups tomatoes, chopped (I used a mix of cherry and roma)
- handful fresh basil leaves, finely sliced
- olive oil
- salt and pepper
- Prep time: 10 min
- Cook time: 30 min
- Servings: 3
- Difficulty: easy
Coat a very large sauce pan with olive oil and hear over medium. Add onions and saute-- about 7 minutes. Then add garlic and tomatoes. Saute until the garlic becomes fragrant. Season with some salt and pepper.
Now add the zucchini, basil, and season again with salt and pepper. Cook for about 4 minutes.
Remove from heat, add olive oil. Toss, serve, and enjoy!
