My first leftovers club with Michele from Alwayz Bakin’ in charge, and it feels great! After almost two years at the helm, I had too much on my plate with the baby coming, so I handed over the reins. Michele has done a fabulous job this month, and I can’t wait to see what the club becomes!
For the new year, I was paired with Ginger from Stark Raving Delicious. We were matched in October, and she sent me to-die for pumpkin rolls. I can’t wait to see what arrives!
My mom is here for the baby (announcement coming– he needs his own post!!), so she has been doing the cooking. Hooray! She made my favorite thing- strawberry bread, so that’s what we sent to Ginger. I hope she likes it as much as I do!
- 3 cups mashes strawberries (can used frozen, drained)
- 3 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 4 eggs
- 1 tsp cinnamon
- 2 cups sugar
- 1 1/4 cups vegetable oil
- Prep time: 5-10 min
- Cook time: 50-60 min
- Servings: 2 loaves
- Difficulty: easy
Preheat oven to 350 degrees. Prepare baking pans and set aside.
Mix all dry ingredients. Make a well in the center of the mixture. Add strawberries, oil, and eggs. Mix by hand until well combined.
Pour into two 9x5 loaf pans. Bake for 50-60 minutes, until a knife comes out clean. Cool on wire rack.
