I found a new delicious blog– Kevin and Amanda. I don’t know where it has been all my life, or what rock I have been hiding under not to have discover this awesome blog sooner!
I mean, look at the dish above– a complete winner! It’s a Spicy Sausage Pasta, and my version isn’t too much different than the original, but why try to mess with perfection? So so so good. And it’s all cooked in one pot, which means clean up is also simple.
- 1 tbs olive oil
- 1 lb smoked chicken sausage, sliced into circles
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 can diced tomatoes, not drained
- 1/2 cup heavy cream
- 1 box whole wheat penne pasta
- 1/2 tsp salt
- 1/2 tsp pepper
- 3/4 cup cheddar cheese, shredded
- Servings: 4
- Difficulty: easy
Heat olive oil in a large skilet over medium-high heat.Add sausage and onions and cook until lightly browned, flipping the sausage about halfway through. Add garlic and cook another 30 seconds.
Add chicken broth, tomatoes, cream, pasta, salt, and pepper to the skillet and stir. Bring to a boil, cover skillet, and reduce the heat to medium-low. Simmer about 15 minutes for the pasta to be tender.
Remove pan from heat and stir in cheese.
