Shrimp and Crab Gumbo

There is something about seafood in the summer that gets me every time. There really is nothing better! I bought lump crab from the grocery store, and I think I ate a quarter of the can before I could even put the crab in the soup!

I adapted this shrimp and crab gumbo from a Weight Watchers cookbook– the original recipe called for okra, but I didn’t include it….I just never have been a huge okra fan. But the recipe has lots of veggies, lots of seafood, and just the right amount of spice. Enjoy!

  • 2 tbs oil (canola or olive)
  • 2 tbs flour
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 carrot, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 3 cups low-sodium chicken broth
  • 1 can diced tomatoes
  • 1/2 tbs hot sauce
  • 1 tsp oregano
  • 1 tsp basil
  • 1 bay leaf
  • 1/2 lb peeled, deveined, and tail-off raw shrimp
  • 1/2 lb lump crabmeat
  • 2 cups cooked quinoa
  • Servings: 8
  • Difficulty: easy


In a large pot, heat the oil. Then make the roux by whisking in the flour. Cook and stir constantly for about ten minutes, until it's a dark brown. Be careful not to burn. Ann onion, peppers, celery, and carrot-- cook until softened, about five minutes, Then add the garlic and continue to cook for another minute.

Stir in the chicken broth and bring to a boil. Reduce heat and add tomatoes, hot sauce, oregano, basil, and the bay leaf. Simmer, and cook covered for fifteen minutes. Add shrimp and the crabmeat. Cook until the shrimp is pink. Remove bay leaf. Serve gumbo over quinoa.

    I’ve heard of gumbo before, but never had it. Shrimp and Crab Gumbo sounds delicious, especially on a rainy or overcast, cold day.

    Yes, please!! LOOOOOVVVEEE that you didn’t add okra. I’m sooo not a fan. It’s the slimies that get me. I’m a sucker for seafood, though. Year round, but summer especially. It’s just so light and easy to make.
