Let’s continue with cookies, shall we??
I opened my cupboard the other day and found the best hot chocolate mix I have ever had– it’s from Williams-Sonoma, and I received it in my Foodie Penpal package a few months ago. The hot chocolate is to die for, and I didn’t want the shaved chocolate to go to waste or go bad (can chocolate even go bad?) before I had a chance to use it all.
So I decided to adapt my mom’s chocolate chip cookie recipe and put shaved chocolate in the batter instead of chocolate chips. This was an excellent decision– they were amazing cookies. I served them at a sorority adviser event, and they were gone by the end of the night!
- 1 cup Crisco vegetable shortening (I buy the sticks.)
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 tsp baking soda
- 1 tsp table salt
- 2 1/4 cups all-purpose flour
- 2 cups shaved chocolate (I used the delicious chocolate from Williams-Sonoma Hot Chocolate mix)
- Difficulty: easy
Preheat oven at 375 degrees. Mix Crisco, sugar, brown sugar, vanilla. Add eggs and mix. Add baking soda, salt, and mix. Add flour, shaved chocolate, and mix. Scoop cookies to evenly spaced air-baked cookies sheets. Bake 9-10 minutes .
