Happy Hump Day! I’m craving pasta- how about you?!? On our most recent trip to Costco, Austin found the world’s biggest container of frozen tortellini. We, of course, bought it and now gorge ourselves on this cheese-filled pasta.
One of the first tortellini pasta dishes we made (besides for with butter or marinara sauce) was this cheesy sausage tortellini adapted very, very slightly from Kevin & Amanda. Delicious and all made in one pot- a complete dinner success!
- 2 tbs olive oil
- 1 lb smoked chicken sausage links, cut into circles, about 1/4 in width
- 2 cloves garlic, minced
- 1/2 cup spinach, chopped
- 3/4 cup low-sodium chicken broth
- 1 cup marinara sauce
- 1/2 cup heavy cream
- 9 oz frozen tortellini
- Salt and pepper to taste
- Parmesan cheese
- Servings: 4-6

Heat 2 olive oil in a large skillet over medium-high heat. Add sausage and cook. Once the sausage is browned on one side, flip and cook the other side. Then, add garlic and cook garlic until it starts to brown. Add spinach and cook until wilted.
Add chicken broth, marinara sauce, cream, tortellini, and salt and pepper and stir to combine. It should start to bubble.
Cover and simmer over low heat for 12 minutes until tortellini are tender. Top with parmesan cheese.
