Quinoa Spinach Mac & Cheese

I love quinoa. I love spinach. I love cheese, lots of cheese. This is why this recipe from Bakeaholic Mama through Tasty Kitchen is perfection. I could lick the plate clean, and I did, in fact, lick the plate clean. And then I went for seconds!

  • 3 tbs unsalted Butter
  • 3 tbs flour
  • 1 1/2 skim milk
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 8 oz shredded cheddar cheese
  • 3 cups cooked quinoa
  • 2 bunches fresh spinach
  • 1/2 cup parmesan cheese
  • 4 tbs butter, melted
  • 3/4 cup panko cread crumbs
  • Prep time: about 20 minutes
  • Cook time: 20 minutes
  • Servings: 6-8
  • Difficulty: easy


Preheat oven to 350 degrees. Spray a 9 x 13 casserole dish with cooking spray and set aside.

In a medium to large saucepan over medium heat, melt three tbs butter and flour. Whisk continuously until it becomes a paste. Then whisk in the milk and bring the mixture to a boil. Next, stir in nutmeg, salt, and cheese. When everything is mixed and melted, remove from heat.

In the same saucepan, mix in the cooked quinoa and spinach. Transfer the mixture into the casserole dish and top with the parmesan cheese.

In a small bowl mix together the butter and bread crumbs. Sprinkle over the top of the casserole.


Bake for about twenty minutes. Serve and enjoy!

    That looks scrumptious! I do love spinach and cheese, and I like quinoa – I haven’t really cooked with it enough to love it yet. I usually eat it when someone else cooks it! One of my goals is to cook it at home more this year. I love any recipe that uses fresh ingredients, so this is right up my alley. What does the nutmeg add?

    I am attempting to go gluten-free this year. One thing I really miss so far is homemade mac and cheese. I will have to try this recipe since I love quinoa.

    I need to try this recipe. I’m not going to lie and tell you it looks amazing but it looks like it would taste amazing. I’m such a chicken sometimes and quinoa sounds… weird. LOL!
