I’m coming out of hibernation for the final Secret Recipe Club reveal. I loved this club when my blog was active, so I’m happy to help it go out with a bang! This month’s reveal feels like life is coming full circle. When I first starting blogging, one of the first bloggers to comment on my posts was Cathleen from A Taste of Madness. When I got the email for my match this month to see it was Cathleen, I was thrilled! I am so impressed with how A Taste of Madness has grown and how delicious her pictures and recipes look!!!

Since it’s fall, I went with Cathleen’s Pumpkin Apple Bread! What a treat– you all should try it asap!

Ingredients

  • 3 cups flour
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 3 cups sugar
  • 2 cups pumpkin puree
  • 3 eggs
  • 1 cup vegetable oil
  • 1/4 cup unsweetened apple sauce
  • 1/2 cup water
  • 2 large apples, peeled, cored and diced
  • Servings: 2 loaves
  • Difficulty: easy

Directions

Preheat the oven to 350. Prepare your baking pans by spraying with cooking spray-- I used one loaf pan and two mini-cake pans.

In a large bowl, mix together the flour, cinnamon, baking soda, and salt.

In separate bowl, beat together the sugar, pumpkin, eggs, oil, apple sauce and water until fully combined.

Slowly mix in the dry ingredients to the wet ingredients until just combined. Fold in the diced apples. Pour the batter evenly into the prepared pans.

Place the pans in the preheated oven. If you are using the 8x8 inch baking pans, bake for 50-55 minutes, and if using loaf pans, bake for 60-65 minutes, or until a toothpick inserted comes out clean.

    What a coincidence! I made a pumpkin cake to bring to work today, but now I wish I had added some apples to it, they certainly go nice together!

    hI!!! I had you this month but having issues with my blog – possibly because I also came out of hibernation to do it. I made your delicious thai basil curry and will have it up as soon as my tech support fixes the issue!

    Would never have thought of pairing apples and pumpkin in a bread. Great final SRC choice.
    I’m going to miss the Secret Recipe Club so much in fact that…
    I’ll be hosting a Link up party starting in January on the first Monday and calling it First Monday, in which I’ll be inviting all SRC members (former), to participate with adding their favorite recipe for the previous month. Not the one with the most views, but the one they made that they like the best. I hope you’ll you’ll join in.
