I can never go to Costco by myself. Do not let me do it. When I am by myself at Costco, no one tells me that we don’t need all the extra things I put in my cart. And no one stops me from eating every single taste test and then buying a couple of these said taste tests.
I left the store with an overflowing carts and lots of stuff we didn’t need. But that doesn’t mean I haven’t made good use of it. One such example is the world’s biggest container of peach-mango salsa. Great salsa but even better as a sauce with shrimp and quinoa. Yum!
Ingredients
- 1 cup quinoa
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 pound frozen shrimp, uncooked
- 2 cups peach-mango salsa
- Servings: 6-8
- Difficulty: easy
Directions
Cook quinoa according to package instructions.
At the same time, heat skillet over medium-high heat. Spray with cooking spray. Add garlic and cook until starting to brown. Add and cook onions and shrimp, until the shrimp is pink. Add peach-mango salsa.
When qunioa is done, add to skillet and mix well.














Shrimp and mango go together like mashed potatoes and gravy! Love the sound of this recipe, girl!
