We had another snow day yesterday, and I was planning to cook and cook and cook. But then, I turned on House of Cards, and the rest of the day found me curled up on the couch.
I had one meal in the crockpot for dinner, but for lunch, I was looking for a quick, one skillet meal. Enter the one pot cheeseburger skillet, adapted from Damn Delicious. Perfect for a cold day- filling and delicious and only a tiny bit of clean-up. That just means more House of Cards on Netflix.
What are your favorite one pot dinners?
- 1 tbsolive oil
- 1 pound ground beef
- 1 onion, diced
- Salt and pepper, to taste
- 1 can whole peeled tomatoes, drained and chopped
- 1 can tomato paste
- 2 cups low-sodium chicken broth
- 1/4 cup ketchup
- 2 tsp deli mustard
- 1 pound rotini
- 2 cups shredded cheddar cheese
- Prep time: about 10 minutes
- Cook time: about 30 minutes
- Servings: 6-8

Heat olive oil in a large pot or Dutch oven over medium high heat. Add ground beef and onion -- brown ground beef, about five minutes. Season with salt and pepper while browning. Then, drain the fat.
Stir in the tomatoes, tomato paste, chicken broth, ketchup, mustard, pasta, and two cups water. Bring to a boil. Cover the pot with a lid, and reduce heat and simmer pasta is cooked through, about 15 minutes.
Remove from heat -- serve with individual bowls and top with cheese.
