One-Pan Tuscan Pork

Does the picture above make your mouth water? I want to reach through the screen and eat the whole plate– even though I had Tuscan pork chops for dinner last night, I could definitely eat leftovers today :)

I bought a ton of pork chops from Cosctco the other week, and I am really enjoying experimenting and trying new ways to flavor and cook them. This recipe is very slightly adapted from Sweet C Designs— another great blog found through Pinterest. The meal was a hit and incredibly flavorful– awesome dinner!

  • 4 pork chops
  • 1 tbs olive oil
  • 5 cloves of garlic, diced
  • 1 can diced tomatoes, not drained
  • 1 onion, chopped
  • 2 tsp oregano
  • 2 tsp basil
  • 1 pound rotini pasta
  • Pesto sauce for pasta (I used a Knorr pesto packet)
  • Prep time: 5 min
  • Cook time: 15-20 min
  • Servings: 4
  • Difficulty: easy


Prepare pasta and pesto sauce according to package instructions.

Meanwhile, heat oil in a large pan on high until warm. Brown pork chops on each side, 1-2 minutes each.

Reduce heat to medium and stir in onions. Continue to flip pork chops-- 2 minutes on each side. Then add the tomatoes, garlic, and other spices. Simmer pork chops and sauce for about 5-10 minutes-- make sure pork is cooked through.

Serve on a bed of pesto pasta.

    I love pork chops! They are one of my favorite dinners…when I go to other people’s houses. Unfortunately, they never turn out right for me! Im going to give them another try and see how this recipe turns out! Wish me luck!
