Oatmeal Coconut Cookies #chocolateparty

Do you know how many calories are in EVERYTHING?  When I was doing Weight Watchers, most fruits and veggies were 0 points, and the higher the proportion of fiber, the less points the food is.  Calories don’t care about the rules of Weight Watchers, and this is going to take some getting used to.

Three days of calorie counting, and I have gone over by several hundred calories each day.  Whoops! But I’m trying, and that’s what counts…at least, that’s what I’m telling myself :)

Are you ready for a “healthy” cookie?  I won the the Picky Palate Cookbook, and I am in love– it’s an amazing cooking, and this recipe is loosely based on her Cinnamon and White Chocolate Coconut-Oat Chippers. And by healthy I mean it’s a little under 100 calories per cookie.  That seems like a lot to me, but I tried really hard to make it less of a junk food.  No butter or oil was used– I used applesauce instead, and the cookies still tasted delicious.  I didn’t miss the butter at all.  I used half whole wheat flour, but don’t worry, I didn’t skimp on the chocolate chips– I have standards you know!

Ingredients

  • 1 cup applesauce
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/4 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/4 cup instant oats
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cup shredded sweetened coconut
  • 1 cup semi-sweet chocolate chips
  • Cook time: 9-12 minutes
  • Servings: 50 cookies
  • Difficulty: easy

Directions

Preheat oven to 375 degrees.  Prepare baking sheets for oven (mine are air baked, so I just pulled them out of the cabinet).

In mixer, add applesauce and sugars until well-combined. Add and mix the eggs and vanilla. In another bowl, combine flour, oats, baking soda and salt.  Combine wet and dry ingredients in the mixer.

Add coconut and chocolate chips.  Mix well.

With a medium cookie scoop, place dough on cookie sheets about an inch apart.  Bake for 9-12 minutes.  Let cool for a few minutes before moving cookies to cooling racks.

    I’m totally feeling your pain with the calorie counting. I’m trying to get back on the train after a lazy December. But I love the applesauce substitution! I think it’s the small steps like those that make the difference for the long run! See you soon!
