No Bake Cookie Dough Bars

Finally! Time for another edition of the Secret Recipe Club! I just love being part of this club. It’s fun to get to try out new recipes and get to know new bloggers.

This month for SRC, I was assigned to Food Babbles. I knew instantly the recipe I would pick from Kate! A little while back, Kate, other great bloggers, and I got together to throw a surprise virtual baby shower for Ruthy at Omeletta. Kate brought no bake cookie dough bars to the party, and I was in love. I wanted to make it, but of course, I completely forgot about the recipe.

AND THEN— I got matched with Kate for the Secret Recipe Club, and my memories returned to me :) I drooled over her pictures and was thrilled to stuff my face with these no bake cookie dough bars when I made them over the weeked.

Ingredients

  • 1/2 cup unsalted butter, softened in the microwave
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 can condensed/evaporated milk
  • 1 3/4 cups sugar
  • 1 cup white chocolate chips
  • 1 cup semisweet chocolate chips
  • Cream cheese frosting (or another 1 cup white chocolate chips)
  • Prep time: 20 minutes
  • Servings: about 16
  • Difficulty: easy

Directions

Line a medium-sized baking pan with parchment paper, with the paper hanging over the edges of the pan (This will allow you to lift the cookie dough bars out of the pan). Set aside.

In a the mixer, combine the butter and brown sugar. Add and mix in the vanilla.Add half the flour and beat just until combined.

In a small saucpan, heat condensed milk and mix with sugar. Pour contents into the mixing bowl. Add the remaining flour and beat until incorporated.

Fold in the white chocolate chips and chocolate chips. Scrape dough into prepared pan and press mixture evenly into pan using hands sprayed lightly with cooking spray (this works wonders!) due to stickiness of dough. Refrigerate overnight until firm.

Drizzle cream cheese frosting over the bars and swirl the cream cheese (OR melt remaining 1 cup white chocolate chips and drizzle over bars). Refrigerate until set. Cut into squares. Serve and enjoy!!
