As Austin cooks more (as I am more stressed by everyday life), he is getting creative, and I am eating well! The other night, he went into the kitchen with no plan, and came out with this– look below!
Amazing right?!? I think so! He roasted veggies and toasted walnuts and served it over fried polenta. And yes, let’s not forget the honey drizzled all over the food. So good– really good! Healthy too– you should give it a try!
- tube polenta, cut into 1/4 inch rounds
- 2 tbs olive oil
- 1 can diced tomatoes, drained
- 1 large bunch fresh spinach
- 1 clove garlic, minced
- 1 onion, chopped
- 1/4 cup chopped walnuts
- Cook time: 20 min
- Servings: 2-4
- Difficulty: easy
In one skillet, heat 1 tbs olive oil. Then cook garlic and onions until the onions are translucent. Then cook spinach and diced tomatoes.
Meanwhile, heat 1 tbs oil in another skillet. Add polenta rounds and fry each side until crispy. Remove polenta. Add walnuts and toast.
Serve veggies and then nuts on top of polenta. Drizzle generously with honey. Enjoy!
