Glazed Lemon Zucchini Bread {Leftovers Club}

I cannot believe today is July 8! Time is flying by– I think especially since I have a six-month old, and he is growing and changing so much every day. Little Bear is THIS close to crawling, and he has been eating everything in sight (well, almost everything)!

Here he is eating sweet potatoes. He loves them so much that he helps with every bite and gets very upset when the spoon is empty! One food we have tried that Little Bear isn’t loving…zucchini.

I’ve made all of his baby food so far– cook plain, puree, and freeze in ice cube trays. So when he kept pushing the zucchini away, I knew these frozen cubes of zucchini were going to be in the Leftovers Club treat. I was paired up with our fearless leader, Michele at Alwayz Bakin’. The theme this month is CITRUS, so I made lemon glazed zucchini bread from Lil Luna. The bread is good, but I could eat the glaze with a spoon!

Ingredients

  • 2 cups cake flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/3 cups sugar
  • 2 tbs lemon juice
  • 1/2 cup milk
  • 1 cup grated zucchini (or 1 cup thawed pureed zucchini)
  • Glaze ingredients:
  • 1 cup powdered sugar
  • 2 tbs lemon juice
  • 1 tbs milk
  • Cook time: 45 min
  • Servings: 1 loaf
  • Difficulty: easy

Directions

Preheat oven to 350 degrees. Spray loaf pan with cooking spray and set aside.

In mixer, beat eggs and then add oil and sugar until well blended. Mix in lemon juice, and milk. Fold in the zucchini. Add in  flour, salt, and baking powder.

 

Pour batter into loaf pan. Bake 40-45 minutes.

When the bread is still warm, make the glaze and pour over bread.
