I know, I know– I just said that I was going to focus on healthy recipes. BUT I made these during the holidays and didn’t have time to share them. And they are so addictive that I have to share. These gingerbread oreo blondies are from Two Peas and Their Pod, and you can’t just eat one.
The original recipe using gingerbread Oreo’s, but I couldn’t find them ANYWHERE
Never fear, Target has their own version called gingerbread cheesecake cookies. The substitution still had these cookies tasting delicious. If you can find these Oreo’s or their Target brand substitute, grab them off the shelves and make these!
Ingredients
- 1 cup unsalted butter
- 2 cups packed brown sugar
- 2 eggs, beaten
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground cinnamon
- 1/8 tsp ground ginger
- 1/4 tsp ground nutmeg
- 2 cups flour
- 1 cup white chocolate chips
- 20 Gingerbread Oreos (Target Brand)-- the other cookies in pack are to snack on while baking :)
- Cook time: 30
- Servings: 20-24 cookies
- Difficulty: easy
Directions
Preheat oven to 350 degrees. Spray 9x13 pan and set aside.
In a microwave safe bowl, melt butter. In mixer, mix butter and brown sugar. Continue to add and mix eggs and vanilla.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg. Add the dry ingredients to the wet ingredients and mix until combined. Stir in the white chocolate chips.
Pour half of the blondie dough into the pan and spread evenly. Press the Oreos on top of the blondie dough, evenly spacing them out. Pour the rest of the dough over the Oreos and spread as evenly as possible. It's tough because the tough is sticky and pretty thick, but do your best.
Bake for 30 minutes or until a fork comes out clean. Allow to cool completely (but try a tiny piece when it's still warm). Cut into squares and serve.
