Fiesta Chicken {Slow Cooker}

Austin and I had a incredibly busy week last week, and making dinners wasn’t so much of a priority. After eating days and days of leftovers, Austin offered to cook in our NEW crock pot! I jumped at the opporunity, and sent him a simple Fiesta Chicken┬árecipe from Cookies and Cups.



This was our dinner and lunch for two whole days. Served over rice for dinner one, over rice again for lunch at work, and inside tortillas for dinner two. Perfect.

  • 3-4 chicken breasts
  • 2 (14 oz) cans diced tomatoes- do not drain
  • 2 (10 oz) cans corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 pkg taco seasoning mix
  • Prep time: less than 5 min
  • Cook time: 8-10 hours
  • Servings: 8
  • Difficulty: easy


Combine all ingredients in slow cooker. Cover and cook 8-10 hours on low or 4-5 hours on high. Shred chicken.

Serve over rice or as taco filling.
