Coconut Peanut Butter No-Bakes

Can I just say that I love the Secret Recipe Club? I love checking in every week to see what each group comes up with.  This is my third month, and I have the hardest time deciding which recipe to make.

I was matched with the Life and Loves of Grumpy’s Honeybunch. She tells lots of great stories about her family and friends. I bookmarked about 10 different recipes and kept going back and forth about which one I was going to make. I couldn’t decide if I should make something with chicken, a soup, or a dessert.  Let’s be serious– I ended up picking a dessert and a cookie no less.  I am on a cookie kick- fourth cookie post in a row!

This cookie is different.  I never turned on my oven for this one.  I love no-bakes, and it took me back to middle school home ec and making no-bakes at home for extra credit.  Yes, I loved home ec, and I was the dork who did extra credit.  BUT– how could I turn down extra credit when it meant baking?  I guess I was always meant to be a food blogger :)


Without further ado, here’s the original recipe for those delicious no-bakes! And please check out the other wonderful bloggers with the Secret Recipe Club- Group A.

  • 2 cups sugar
  • 1 stick butter
  • 1/2 tsp salt
  • 4 tbs cocoa
  • 1/2 cup skim milk
  • 1 tsp vanilla
  • 3/4 cup unsweetened coconut
  • 2 1/2 cups quick cook oatmeal
  • 3/4 cup smooth peanut butter
  • Difficulty: easy


Mix sugar, butter, salt, cocoa and milk in large saucepan.  Bring to a boil and cook for 10-15 minutes.  When it forms a soft chocolate candy ball, then it is ready.

Quickly stir in vanilla, peanut butter, oatmeal and coconut.  If it starts to harden too quickly, stir in just a little more milk to loosen it up.  Spoon out onto wax paper by tablespoons.  Let cool.

    So I know what I’ll be making the next time my allergic to peanuts/tree-nuts hubby goes out of town! I love peanut butter and coconut and can’t wait to try a (no-bake!!!) cooke that combines the two. Delicious SRC pick!!!

    It’s so funny that you mention middle school home ec class because that is what no-bake cookies always remind me of too! I guess home ec curriculum was pretty standard back then! These look delicious; I’ll definitely keep them in mind for summer.

    Hi Elisabeth! It is always so much fun to find out who had your blog to cook from :) These cookies are a favorite in our home. I make a non chocolate version too that is Grumpy’s favorite! Oh, and I totally agree, who could turn down extra credit when it came to baking!? :)

    I never would have thought of peanut butter and coconut as a flavor combination. Sounds delicious. I am definitely looking forward to trying these this summer when I’m craving a sweet treat but it’s too hot to turn on the oven.
