How was your Easter? Mine was great! Early am service– with plenty of seats to spare, and we got there late, great brunch with friends, started packing for the big move, and then dinner with our Williamsburg family . And, of course, I made these amazing chunky apple cinnamon muffins!
I was assigned to Chit Chat Chomp this month for the Secret Recipe Club, and I was thrilled– I love all the amazing dessert treats Leigh comes up with! The only tricky thing is that Leigh is in Australia, so I had to make sure the measurements and temperatures were right, but no fear– this muffins turned out so wonderful. I can’t wait to have them for breakfast tomorrow (I’ll eat one, maybe two, and share the rest).

- 1 large Granny Smith apple, peeled and diced
- 1 cup sugar
- 2 cups flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tbs cinnamon
- 2 eggs
- 1 cup milk
- 4 tbs butter, melted
- Prep time: 5 min
- Cook time: 20-25 min
- Servings: 16 muffins
- Difficulty: easy
Preheat oven to 350 degrees. Prepare muffin tins with cooking spray or cupcake liners.
Combine all dry ingredients together, then mix in the other ingredients-- leaving the apples to mix in last.
Pour evenly into muffin tins, about 3/4 full. Bake 20 minutes until a fork comes out clean.
Cool a bit and then enjoy warm for dessert, or let them cook completely and eat for breakfast. Enjoy!
