I am a sucker for a good casserole dish. I love to mix things together even when I cook them separately, so why not cook it all together?
And— this has bacon in it! A big score for the hubby. The casserole was a huge hit, and was actually pretty healthy too
I used a recipe from Krafted Koch as my inspiration.
- 1 cup chicken broth
- 2 cups milk
- 1/2 cup flour
- 1 tbs Montreal steak seasoning
- 2/4 cup uncooked quinoa
- 1/2 lb. chicken, cut in small strips (I used already cooked chicken strips)
- 1/2 cup cooked bacon, crumbled
- 1 onion, chopped
- 2 cups asparagus, cut into two-inch pieces
- 2/3 cup shredded cheddar cheese
- Prep time: 10 min
- Cook time: 25 min

Preheat your oven to 375 degrees. Spray a 9x13 casserole dish with cooking spray and set aside.
In a large saucepan over high heat, whisk together the chicken broth and flour. Then add the milk and the seasoning. Mix in and cook for 3-5 minutes.
Next, fold in the quinoa, chicken, bacon, asparagus, and onion. Pour into baking dish. Cook for 30-40 minutes (until chicken is pink or if using already cooked chicken, until the quinoa has sprouted).
Serve and enjoy!
