Chicken, Asparagus, & Quinoa Bake

I am a sucker for a good casserole dish. I love to mix things together even when I cook them separately, so why not cook it all together?

And— this has bacon in it! A big score for the hubby. The casserole was a huge hit, and was actually pretty healthy too :)

I used a recipe from Krafted Koch as my inspiration.

Ingredients

  • 1 cup chicken broth
  • 2 cups milk
  • 1/2 cup flour
  • 1 tbs Montreal steak seasoning
  • 2/4 cup uncooked quinoa
  • 1/2 lb. chicken, cut in small strips (I used already cooked chicken strips)
  • 1/2 cup cooked bacon, crumbled
  • 1 onion, chopped
  • 2 cups asparagus, cut into two-inch pieces
  • 2/3 cup shredded cheddar cheese
  • Prep time: 10 min
  • Cook time: 25 min
  • Servings: 6
  • Difficulty: easy

Directions

Preheat your oven to 375 degrees. Spray a 9x13 casserole dish with cooking spray and set aside.

In a large saucepan over high heat, whisk together the chicken broth and flour. Then add the milk and the seasoning. Mix in and cook for 3-5 minutes.

Next, fold in the quinoa, chicken, bacon, asparagus, and onion. Pour into baking dish. Cook for 30-40 minutes (until chicken is pink or if using already cooked chicken, until the quinoa has sprouted).

    I am sucker for a good casserole too. I am beyond fond of every ingredient in this one.
    So this works for me. I will have to admit I haven’t eaten dinner yet and I am hungry.
