We had a snow day last week. I love snow day– I guess I could be doing work in my pajamas, but why?!?
So instead, I went outside and played in the snow, took a hot shower (and it burned because I was so cold), and made a great comfort meal– cheeseburger macaroni.
The recipe is from Kevin and Amanda. I love the recipes I borrow from them, especially since everything is pretty much cooked in one pot– woo hoo!
What are your snow day traditions?
- 1 lb ground beef
- 1 pkg taco seasoning
- 1 can diced tomatoes, drained
- 5-6 jalapeno rings, diced
- 2 cups beef broth
- 1 cup macaroni shells
- 2 tbs butter
- 2 tbsp flour
- 3/4 cup skim milk
- 1 cup shredded cheddar cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- Cook time: 20-25 minutes

Brown the hamburger meat and drain out the fat. Next, stir in taco seasoning, diced tomatoes, jalapenos, beef broth, and macaroni. Heat to boiling. Reduce heat and cover pan with a lid. Simmer 12-14 mins until macaroni is tender.
While the pasta is cooking, make the sauce. Form a roux with the butter and the flour. Whisk until it's fragrant and starts to brown. Whisk in the milk until it starts the bowl. Then, reduce the heat and add the cheese, slat, and pepper. Pour into larger pan with pasta and ground beef.
Serve with sliced avocados. Enjoy!
