Growing up, my brothers drenched everything in hot sauce. I didn’t eat anything with hot sauce for years and years because the smell of hot sauce wasn’t incredibly appealing to me. And I grew up in Buffalo, NY– typing that last line almost feels like blasphemy.
It’s okay though, I am a hot sauce fan now, especially Frank’s and hot sauce from Anchor Bar, the home of the Buffalo wing! When I saw this recipe from Alida’s Kitchen, I knew I wanted to make my own (slightly adapted) version. Quinoa + hot sauce = delicious.
- 1 cup quinoa, rinsed
- 2 cooked boneless, skinless chicken breasts, shredded or chopped
- 1 cup chopped/diced carrots
- 1 cup broccoli florets
- 1/2 onion, minced
- 1/2 cup hot sauce (I used hot sauce from Anchor Bar-- home of the original Buffalo wing)
- 1/4 cup olive oil
- 1 tbs lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp salt
- Prep time: 10 min
- Cook time: 30 min
- Servings: 4-6
- Difficulty: easy
Make quinoa according to package instructions (1 cup quinoa to 2 cups water).
Spray skillet with cooking spray and saute all of the vegetbales until they are cooked but still crisp.
In a small bowl, whisk together the hot sauce, lemon juice, garlic powder, paprika, and salt. Combine sauce, chicken, and quinoa. Mix well.
You can either serve it hot (this is what I did) or chill it in the fridge before serving. It will be delicious either way!
