Bella Braised Chicken

The best thing about cooking Weight Watchers friendly meals is not knowing they are Weight Watchers friendly meals. Am I right? This Bella Braised Chicken is something that you will go back to again and again.

I have! And it’s just as delicious each time I make it, with crisp veggies and juicy chicken. Ok, drooling just thinking about my dinner from last night :)

  • 1 tbs unsalted butter
  • 2 onions, chopped
  • 2 celery stalks, diced
  • 1 carrot, diced (5-6 baby carrots)
  • 2 garlic cloves, minced
  • 3 tbs flour
  • 1 tsp freshly ground black pepper
  • 4 skinless boneless chicken breasts
  • 1 tbs olive oil
  • 14.5 oz can diced tomatoes, drained
  • 1 cup low-sodium chicken broth
  • 1/2 cup dry white wine
  • 2 tbs minced parsley, plus more for garnish
  • Servings: 4
  • Difficulty: easy


Preheat oven to 350 degrees. Spray 9x13 casserole dish with cooking spray and set aside.

In large nonstick skillet, melt the butter. Then, add onions, celery, carrots, and garlic. Cook for about 5 minutes until softened. Transfer the veggies into the casserole dish.

In a gallon-size Ziploc, combine flour and pepper. Add chicken. Shake to coat.

In the original skillet, heat oil. Add chicken and brown two minutes on each side. Arrange chicken on top of vegetables in the casserole dish.

Again, use the skillet and combine the tomatoes, broth, wine, and
parsley. Cook, scraping up browned bits from bottom of skillet until
liquid comes to a boil. Pour the liquid over the chicken.

Cover with foil and bake for about 45 minutes. Serve and sprinkle with more parsley.

    Best chicken recipe ever. I make it all the time. I add extra carrots and celery because I love having a ton of veggies to ladle over the mashed potatoes I make to go with it!!! It is a huge hit at my house.
