Guess who’s having a baby?!? If you guess me, the answer is NO! We are not ready for that yet. But…
The AMAZING Ruthy from Omeletta is the having a BABY– yay! I’ve gotten to know Ruthy over the past couple months through the Leftovers Club, and I drool over her goodies each month. Just last month, she made these delectable English Toffee.
So let’s have a virtual baby shower for Ruthy and celebrate with her and for her! I’m thrilled to be having this baby shower with an awesome group of bloggers.
When I think baby shower, I think little things, bite-sized things, so these mini beef and pepperoni pizza puffs are perfect. It’s easy to grab one or four puffs and still have room to sample all the other treats at the shower.

All the Other Delicious Baby Shower Food:
- 3/4 cup all-purpose flour
- 3/4 tsp baking powder
- 1/2 tsp garlic powder
- 3/4 cup skim or 1% milk
- 1 egg, lightly beaten
- 4 oz shredded mozzarella cheese( about 1 cup)
- 4 oz pepperoni, cut into quarters
- 1/2 lb ground beef, browned
- 1/2 cup pizza/spaghetti sauce
- Difficulty: easy
Pre-heat the oven to 375 degrees. Spray mini muffin pans (I used two 12-cup muffin tins), and set aside.
In a large bowl, whisk together the flour, garlic powder, and baking powder. Then, whisk in the milk and egg. Stir in the mozzarella, sausage and pepperoni, and let stand until the oven is preheated.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
Meanwhile, microwave the pizza sauce. Serve the puffs with the pizza sauce for dipping. Try and eat just one :)
