I love a one-pot meal. If you’ve noticed, I make many of these. My most recent one (yes- weeks ago when I wasn’t traveling for work), I made a great one-pot dish.
It was inspired from a recipe I posted in February (Spicy Sausage Pasta). Same style of recipe but a very different flavor profile. It was a hit in our house and made for great leftovers too.
- 1 tbs olive oil
- 1 lb ground beef
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 package frozen peppers (red, green, yellow)
- 1 can evaporated/condensed milk
- 1 box whole wheat penne pasta
- 1/2 tsp salt
- 1/2 tsp pepper
- Servings: 6-8

Heat olive oil in a large skilet over medium-high heat.Add ground beef and ontions until cooked.Add garlic and cook another 30 seconds.
Add chicken broth, milk, peppers, pasta, salt, and pepper to the skillet and stir. Bring to a boil, cover skillet, and reduce the heat to medium-low. Simmer about 15 minutes for the pasta to be tender.
