Last Sunday was draft day, and it was a big day in our household. Draft day might be my hubby’s favorite day of the year– it’s when he drafts a team for not one, but two, fantasy football leagues.
A couple of years ago, I don’t think my husband could name more than a handful of professional sports teams, but fantasy football has changed all that, and I kind of like hearing about football at the dinner table and don’t mind when he downloads a fantasy football app on my phone to check the scores when we aren’t watching the games.
As you can imagine, draft day is serious business. During the draft a Google+ hangout was used, so team managers from his league could all trash-talk as they picked their teams. We had several people over at our house, and I felt like a good piece of beef was in order, BBQ beef brisket to be exact. It seemed fitting

We normally use the grill for everything, but the BBQ brisket for draft day was made in the handy-dandy slow cooker. But I couldn’t pass up on showing these tips for grilling– even the hubby learned something new!

The brisket was a huge success we made three pounds, and even with several men in attendance, there were still leftovers. Meal 1- Beef Brisket Sandwich…and then came the leftovers (which make prettier pictures). Meal 2 was brisket with couscous and spinach, and meal 3 was brisket over mashed potatoes.
So we ate like kings and queens for several days- score!
Here’s more about Beef Checkoff– it was established as part of the 1985 Farm Bill. It’s a national marketing and research program funded by America’s cattle farmers and ranchers. It funds research and promotion efforts designed to increase domestic and/or international demand for beef.

- 3 lb beef brisket
- Brisket seasoning (we used a rub from Williams-Sonoma)
- 1 ¼ cups Bbq sauce
- ¼ cups honey
- ½ cup brown sugar
- 2 tbs cornstarch
- Cook time: 10+ hours
- Servings: 8-10
- Difficulty: easy
Dry rub both sides of the brisket with the seasoning mixture.
Stir together the honey, barbecue sauce and brown sugar.
Pour half of the sauce into the bottom of your slow cooker.Place the seasoned brisket, fatty side up, into the slow cooker. Cover the top of the brisket with the remaining sauce.
Cook low for 10 hours and then set to warm
Remove brisket and cut into slices.
For the gravy, stir in cornstarch to thicken. Serve brisket, topped with gravy however you want (on own, sandwich, etc). Enjoy!
