All hail the crock pot! It has been my favorite thing this winter. The hubby even got me a new one for Valentine’s Day, and this one has a timer — dream come true. Seriously When I asked for a crock pot, he reminded me that he would never get me an appliance for a holiday (remember that scene in Father of the Bride??? Blender…). BUT, I told him that appliances are perfect for gifts when I ask for them because he can cook for me in it too!
One of the first things that we made was balsamic shredded beef, slightly adapted from Shugary Sweet. This was so easy and packed with flavor, a real hit! And making mashed potatoes was super easy too. Yay for easy but hearty recipes!
- 4 lb beef chuck roast
- 1 cup low-sodium chicken broth
- 1/2 cup brown sugar
- 1/4 cup balsamic vinegar
- 1 tbs worcestershire sauce
- 1 tsp salt
- 1/4 tsp crushed red pepper flakes
- 3 cloves garlic, minced
- Servings: 6-8
- Difficulty: easy
Whisk together all the ingredients, except the beef, and pour in the bottom of a slow cooker. Add the chuck roast. Cover the slow coker and cook on low for 6-8 hours.
Shred roast with forks in crock pot nd mix in with juices.
Serve over mashed potatoes with the juices as a gravy. Enjoy!
