Apple- Bacon- Cheddar Quiche {Secret Recipe Club}

Hope you all enjoyed Super Bowl Sunday! Austin and I kinda stopped following the season after he won his fantasy football league (it ends when the regular season ends) and when my beloved Buffalo Bills didn’t make it to the playoffs :( So instead, we are spending the day binge watching Covert Affairs. I am obsessed– the first season was so-so but Season 4 (what I’m watching currently) is FANTASTIC.

And I’m making quiche– perfect combo right?!? Spy tv and quiche. Works for me :)

This month for the Secret Recipe Club, I was assigned Cupcake Muffin. I didn’t have to go far on her page to find the perfect recipe– I made apple-bacon-cheddar quiche. It was soooo good– especially since there was lots of bacon on it! Thanks Sara for the great recipe!

Ingredients

  • Olive oil dough:
  • 1 1/2 cups flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp baking powder
  • 1/4 cup olive oil
  • 2 large eggs
  • For the filling:
  • 1/2 lb bacon, cooked and cut into squares
  • 2 apples, peeled, cored, and diced
  • 6 oz shredded cheese
  • 1 tbs flour
  • 2 cups heavy whipping cream
  • 3 large eggs
  • 1/4 tsp salt
  • 1/2 tsp ground white pepper
  • Servings: 6-8 slices
  • Difficulty: medium

Directions

Spray a pie plate with cooking spray or get out a springform pan and set aside.
Then, make the crust. In a large bowl, whisk together the flour, salt, sugar, and baking powder.  Make a well in the center, and then add the oil and eggs. Beat the oil and eggs together, and then gradually draw in the dry ingredients a bit at a time until the dough starts to hold together.
On a lightly floured surface, fold the dough over itself for a few minutes. Next, roll the dough into about a 12-inch circle. Fit into pie plate or pan. Cover with plastic wrap and put in fridge.
Preheat the oven to 400 degrees and move a rack to the bottom.
In a skillet, cook the bacon until it is crispy. Remove and put on paper towel lined plate and set aside. Cook the apples in the skillet until they are softened. Remove the apples from the pan.
In the same bowl you made the crust, combine the cheese and flour. Remove the crust from the fridge, and spread the bacon over the bottom of the crust, and then top with the apples.  Scatter the cheese/flour mix over the apples.
Using that same bowl, whisk together the cream, eggs, salt, and pepper. Pour over the cheese.
Place the tart in the oven and immediately lower the heat to 375 degrees.  Bake until the filling is set and nicely browned, 30-40 minutes.  Cool before serving-- enjoy!

    I have never watched Covert Affairs. I might have to check it out. Your quiche looks amazing. I love quiche but my husband is not much of an egg fan and I hate to make one for myself. He does like bacon though so maybe I could change his mind. LOL
